Christmas is incomplete without plum cakes.This is a non alcoholic version of homemade plum cake I make for Christmas. Instead of soaking the dry fruits in alchohol I've used mixed fruit juice for soaking them.

- 1 1/2 cup Flour/ maidha
- 1 tspn Baking powder
- 1/2 tspn Baking soda
- 3 Eggs
- 1 pinch Salt
- 1/4 cup Flavourless vegetable Oil
- 1/2 cup Powdered sugar
- 1/2 tspn fresh Orange zest
- 1 tspn Vanilla essence
- 2 cloves
- 1/4 cup Cashews
- Spices
- 1/4 tspn fresh Nutmeg powder
- 1/2 tspn cinnamon powder
- 1/2 tspn cardamom powder
- 1/2 tspn dry ginger powder
- For soaking dry fruits
- 1 cup mixed fruit / grape /orange juice
- 1/4 cup Black Raisins
- 1/2 cup Dates(pitted)
- 1/4 cup Tutti frutti
- 1/4 cup Cherries
- Sugar syrup
- 1/2 cup Sugar
- 1 cup hot boiling Water
Instructions to make to make Christmas plum cake
- Cut the dates and cherries. Soak them in fruit juice(I've used store bought mixed fruit juice - bnatural) with rasins and tutti frutti for minimum half an hour or overnight. You can add any dry fruits of your choice like apricots, dry papaya almonds etc.. but the mixed fruits and nuts should not exceed 1 and ½ cup
- In a heavy bottomed pan, add sugar. Once sugar starts to melt lower flame and caramelize to get nice brown color(Do not burn the sugar). Add hot boiling water. (Move far while pouring as it splutters). Reduce this to get ½ cup sugar syrup. Keep aside to cool.
- Separate the egg whites from the yolks in two different mixing bowls.
- Beat the egg whites with an electric beater gradually increasing speed till fluffy and stiff peaks are formed. Add a pinch of salt while beating. Keep aside.
- Now add grated orange zest (taking care not to grate the white part as it gives a bitter taste) followed by vanilla essence to egg yolk. Beat using electric beater.
- Powder sugar with 2 cloves and add to the egg yolks and beat in high speed till creamy.
- Next add the ½ cup caramelized sugar syrup and continue beating. Finally add oil and beat in low speed until combined. No electric beater required after this stage use only spatula.
- Now place a sieve over this and add flour, baking powder, baking soda and spices. Mix gently with a spatula using cut and fold method in same direction.
- Strain the dry fruits and add to the batter (without juice). Dust the cashews with some flour and add it to the batter and mix using cut and fold method.
- Now take the beaten egg whites and add it to cake batter in 3 batches. Fold gently with spatula as previous step.
- Pour into a greased and dusted 8"cake tin(I've divided the batter into a 7" and a 6" tins also which gives a flat top without cracks)or lined with butter paper and top it with cashews. Tap twice to remove any air bubbles.
- Bake at 180°C in a preheated oven for 1 hour placing in the middle rack. Check with toothpick. If it comes out clean the cake is done or keep for 10 more minutes.
- Cool completely on a wire rack and then remove from cake pan. Slice and enjoy!
